WieFit’s Famous Buffalo Chicken Chili

1 lb. ground chicken
1 Tbsp. olive oil
1 onion- diced
½ cup celery- chopped
½ cup carrots- chopped
2 cloves garlic
1 tsp. cumin
1 cup chicken broth
1 (15 oz.) petite diced tomatoes
1 (15 oz.) cannellini beans- rinsed and drained
1 tsp. paprika
½ tsp. oregano
¼ tsp. cayenne
½ cup hot sauce
Salt/pepper to taste

Crumbled blue cheese- optional (but if you like blue cheese, this makes it!)

*cook chicken in skillet, set aside
*heat oil and add onions, celery, carrots and cook until tender, about 10-15 min.
*add garlic and cumin- cook about 1 min.
*add broth
*add chicken, tomatoes, beans, paprika, and simmer for 15 min.
*Top with blue cheese crumbles
