Turkey Meatloaf

1 Tbsp Extra Virgin Olive Oil
1 cup white onion, chopped
6 large fresh mushrooms, chopped
2 tsp Mrs. Dash Southwest Chipotle Season Blend
20 oz package 99% lean white ground turkey
1/4 cup Old Fashion Oatmeal
1/2 cup Reduced Sugar Ketchup (if close to contest, I may switch to low sodium)
1 Tbsp apple cider vinegar
1 Tbsp Pure Maple syrup
2 tsp yellow mustard
1/2 tsp Onion powder
1/8 tsp ground cumin
1/4 tsp Garlic Powder
1/4+ tsp Tabasco
 
Heat oil in skillet and sautee the onion and mushroom until tender. Add Mrs. Dash to the sautee and sautee for 1 minute longer. Mix the raw turkey and oatmeal and add the sauteed veggies into the turkey. In a seperate bowl, combine the Ketchup, vinegar, syrup, mustard and spices and mix well. Add the BBQ sauce mixture into the turkey and blend well. Scoop the turkey into prepared muffin tins and bake at 325 degrees for 20 minutes or until turkey is fully cooked. Makes 10 mini meatloafs
